COLLI EUGANEI BIANCO SPUMANTE MILLESIMATO

The MILLESIMATO 2005 was obtained from the selection of the best grapes produced by vineyards older than twenty years.

Denomination: Colli Euganei Bianco Spumante (Colli Euganei White Sparkling) Classic Method, Pas Dosé
Grape: Chardonnay

Cultivation System: spurred cordon and Guyot

Output: 80 q per hectare

Harvest Time: mid-August

Vinification: grapes are manually collected in small cases of 14 kg. After a soft pressing, the first must (about 45% of grapes) is fermented in thermal-conditioned steel tanks.

Draught: the wine is refined and cleared for about eight months; then the cuvée is made and liqueur de tirage is added. Bottles are closed with a crown cap and placed carefully in piles in underground caves where they are kept at a constant temperature of 12°C and refined for forty months.

Degorgement: after the refinement period, bottles are moved into pupitres for the manual remuage, which lasts eight weeks. This process allows the sediment of the second fermentation to rise to the bottle neck. After the neck is iced, the sediments are poured out and then the bottle is filled up with some wine of the same type.

MUSCAT FIOR D'ARANCIO GRAPPA

The earliest mention of Moscato Fior d'Arancio dates back to 1300, when the poet Francesco Petrarca cites this wine in one of his works, calling it Moscato Sirio. Until the second half of the last century, Moscato grapes were cultivated successfully in the Euganean Hills area with the name Moscato Arancio but, because of the problems due to their late ripening, the cultivation of these grapes was almost abandoned. Only a few skilful and passionate producers prevented these grapes from disappearing. The Grappa obtained from the distillation of Moscato Arancio marc has a strong scent, a pleasant flavour and a harmonic taste. Thanks to the particular Moscato scent and the delicate scent of orange skin and rose petals, this Grappa gives its best in its aftertaste and elegant persistence and is pleasant even during the summer, if served chilled.

DOC COLLI EUGANEI MERLOT 2008 MIRO

Denomination: DOC Colli Euganei Merlot 2008

Grape: 100% Merlot

Cultivation System: spurred cordon

Output: 50 q per hectare

Harvest Time:  first ten days of September

Vinification: in wooden vats for fifteen days

Refinement:  in barrique for twenty-four months

Tasting Notes: wine made only in particularly good vintage years. Merlot grapes, which have been cultivated on the Euganean Hills for about 150 years, are grown on the cool, north facing slopes of Monte Fasolo and on the sunny, south facing slopes of Baone. Miro has a fruity and elegant bouquet and sweet tannins perfectly integrated. Minerality and sapidity make it very intriguing.

IGT VENETO BARBERA CIPRESSI

Denomination: Barbera IGT Veneto

Grape: 100% Barbera
Cultivation System: Guyot

Output: 50 q per hectare

Harvest Time:  last week of September

Vinification: the hand-picked grapes are pressed and destemmed and transferred to wooden vats, where they ferment for ten days at a temperature of 24/26°C. After fermentation grapes macerate for five days. 

Refinement: wine is aged for fourteen months in tonneaux.

Tasting Notes: wine obtained from grapes cultivated on cool, north facing slopes of the Euganean Hills, at 300 metres a.s.l. Volcanic soil gives this wine a strong minerality, which blends well with its considerable acidity. Intense ruby-red in colour, it has a nose of dark rose and cherry must.

Recommended with warm appetizers, starters, roast red meat, half-seasoned hard cheese or fatty and creamy cheese.
