Wine making process:
The grapes are hand-picked and then the stalks
are removed. It his fermented in containers at a
controlled temperature of 28°C for twelve days.
Then the wine is drawn off and fermentation is
completed in steel tanks.
Refinement:
After the first decanting, refinement is carried
out in barrels for the first and second passage
where the malolactic fermentation occurs.
After fourteen months, wine is decanted and
brought together. After resting for four months,
it is bottled without being filtered.
Tasting notes: Intense ruby color, a fruit smell that hints of
cherry and blackberry jam with spice hues of
pepper and coffee accompanied by sweet hues
of vanilla. The taste is decisive and strong
with silky tannins, a creamy texture and long
aromatic persistence. Dry final taste.
